Culinary Program in Peru 2018 – Student Application

Program Summary:

ENTREPRENEURSHIP AND INNOVATION are a major focus of the Nova Scotia Community College. As part of this work we are presenting the first year of this exciting program opportunity!

South American cuisine has many influences, due to the ethnic fusion of South America. This combination of great ingredients with customs from Peru topped with ethnic influences has made Peruvian food some of the best in the world. To explore this further, NSCC is offering an exciting program opportunity!

The 2018 NSCC Culinary Programs will provide an opportunity for students to travel to Peru in South America to participate in a program at partner institution Institudo del Sur (ISUR). The program will consist of a variety of activities including demonstration/kitchen participation of Peruvian dishes, industry visits (restaurants, markets, farms etc.) and a cultural program. The NSCC team will engage with students and faculty from ISUR during the time they are there. The exchange will involve a mutual sharing of cooking techniques and gastronomy from both Peru (by students and faculty of ISUR) and Nova Scotia (from students and faculty of NSCC).

The 2018 program will take place for fourteen days September 2018. 

 Program Qualifications:

This program is open to all full-time NSCC students enrolled in the Culinary Program. 

About Arequipa, Peru and Institudo del Sur

Arequipa is Peru’s second largest city and is approximately 1,000 kilometers south of Lima and located 2,328 meters above sea level. Although Arequipa’s historic (and beautiful) city center is a UNESCO World Heritage Site (declared in 2000) it is a very industrious city with a high level of employment compared to other regions of the country. Tourism is also a big industry in Arequipa as it is the third most visited city in Peru after Cusco and Lima. The city offers beautiful mountains/volcanoes and valleys and is a culinary delight.

Institudo del Sur (ISUR) is a private Catholic technological institute located in the heart of Arequipa. Programs offered at ISUR are in the areas of Business, Hospitality and Tourism, Gastronomy, Administration and Graphic Design and Multimedia (www.isur.edu.pe).  NSCC has been working with ISUR since 2014 and has had six Peruvian students on exchange studying Tourism Management and Culinary Arts. In 2015 NSCC tourism students visited ISUR on an international tourism program exploring and leaning about the industry in the region.

Learning Outcomes:

  • To develop and refine the skills needed to prepare for and participate in an international learning experience including research, organization, risk management, teamwork, interpersonal communication and cultural competence and sensitivity.
  • To identify and reflect on the differences and similarities between Canada and Peru in regards to the culinary techniques and the gastronomy industry in general
  • To strengthen academic and portfolio profiles through enhanced research, analytical thinking, planning, communication, innovation, entrepreneurship and applied learning. 

Selection Criteria:

  • Must be a NSCC student with a valid passport (or the ability to get one).
  • Applicants must be in good academic standing.

Students should complete their application on or before June 4, 2018.  Following interviews with shortlisted candidates, students will be notified in the beginning of May if they are accepted to participate in this program.  After receiving approval students will be given a payment schedule and will be expected to pay a $250 deposit as their first payment. At this time a learning contract will also be distributed to be signed by students and faculty outlining roles and responsibilities.

Pre-Departure:

  • Students accepted into this program must participate in the pre-departure online course starting in the summer of 2018
  • Students must follow the NSCC international travel policy

Wait List:

Those who are interviewed but not selected may have the opportunity to be placed on a wait-list until all deposits are received.

Program Cost:

The approximate costs associated with this program are outlined below.  The exact costs will be confirmed by NSCC and ISUR and will depend on Peruvian Soles exchange rate.  The following costs will be included in your Program Fee payable to Nova Scotia Community College.

Additional Individual Costs (may vary depending on individual):

Any meals not included in the Program Fee (estimated) $700

Participants are responsible for the costs of their passport & passport photos ($125), immunizations and prescriptions ($100), meals and any additional expenses not outlined in the Program Fee.

Student Bursary

Students will have the opportunity to apply for a bursary of up to $500 from NSCC International (made possible through external funding) to participate in the program. Application details will be sent to those selected to participate in the program.

Withdrawal:

Students who withdraw from this program after they have confirmed their participation will forfeit their deposit.
